Rainbow Sprinkle Birthday Cake

One of the very best things about living here is being so close to so many family members. Obviously there are my mother and father in law upstairs along with a sister in law, but I also have an amazing Sister in law just 4 exits down the freeway. We love to spend as many Friday nights with each other as we can, with the kids playing and us adults enjoying each others company (she’s hilarious!)

Anyway we also get to spend time together for family birthday dinners. Last week was my nephews birthday. We got together for just dessert, and I offered to make a simple cake. He requested chocolate cake and vanilla frosting! Beyond that it didn’t matter. So I had a ton of sprinkles left from my Ice Cream Parlor birthday party and having seen an adorable cake on pinterest with sprinkles I decided it was the perfect time to try it out!!!

Then as I was taking pictures I moved it to quickly and it FLIPPED OVER!!!! GAH!!!! Luckily the cake didn’t break, so I flipped it back, re-spread the frosting, intermixed with sprinkles now, and re-sprinkled it! It worked great (and of course tasted amazing- and that’s all that really matters, right?)

Here is how I sprinkled it: I tilted a FRESHLY frosted cake, poured a pile of sprinkles into my hand and put it against the bottom of the cake and then brought my hand up the cake, pressing in the sprinkles as I went. For the top I poured a pile on and softly spread it around, pouring more where I needed it.

Pretty simple, BOTH times I did it! And quick to, an easy last min cake decoration if you need one! AND I have to say but I kind of LOVED the extra texture of the sprinkles in the frosting! I might just do that under the fondant in my next cake for FUN!

Crochet magic ring start

Most people probably start a rounded crochet project in a chain, like ch2, 11 sc in the 2nd ch. It’s great, but it tends to leave a big hole, or gap in the center. But if you like your center TIGHT you’ll need to use a Magic ring! Then there will be no hole or gap in the center like this.

materials:
Any yarn
Any hook

abbreviation:
YO (yarn over)
ch (chain)
sl st (slip stitch)
sc (single crochet)

1. Wrap the yarn around your finger once or twice (I’ve always preferred twice, but it’s hard to pull tight later). Front to back clockwise.

2. Stick the hook into the circle and YO and pull it back through

3. Ch once (or more for a larger stitch)

4. Sc around (or any other stitch you are using)

5. Now pull the short end, until you close the circle up tight!

6. Sl st to the first sc and your first row is done!

Chocolate Peanut Butter Chunk Valentines scones

I’ve mentioned before how much we love breakfast for dinner at our house. These are more like breakfast for snack or dessert! Or lunch, or midnight snack, etc… I make a TRIPLE batch of these and eat them for pretty much every meal until they are gone!

I’ve shared this chocolate chunk scone recipe before with just chocolate, but I SOMEHOW ran out of mini chocolate chips (my go to for scones and pancakes) so I used regular size chocolate chips and as I was getting them out I saw the peanut butter chips and they sounded so good I did half and half!

I added red powdered food dye to the dough (with the other dried ingredients) in honor of Valentines day!

Valentines Chocolate Peanut Butter Chunk Scone
6 C flour
1 C sugar
3 Tbsp baking powder
1 1/2 tsp salt
1/2 tsp (or more for a darker color) powder red food dye
1 C chocolate chip
1 C peanut butter chips
3 3/4 C heavy cream
Extra cream and red sugar for topping
Preheat your oven to 425. Whisk flour, sugar, powder, salt, powder food dye and the chips. Add the cream to the flour mixture and mix until moist. Then knead the dough in the bowl 5-10 times, this should clean up the sides.

Transfer the ball to a slightly floured surface and roll out about 3/4 inches tall.

Then I used my small heart cookie cutter to cut out hearts.

and dip the wet top into a plate of red sugar- I like the large chunky sugar for these.

Put them on a cookie sheet with parchment paper and cook at 425 for 12-15 mins (until the top JUST starts to brown).

Let them cook a min (or second- depending on how hungry you are) and then enjoy!!!  My kids were tickled with these Valentines version and asked me to make them again ON valentines!  What are your Valentines breakfast plans?
