
Let’s preface this. This is a terrible picture! Really, very bad. Next time I make this I’ll try to get a better picture. Maybe before it’s warmed it will look better? But even though it’s not a pretty picture it is a delicious meal. One of my favorites in fact. I don’t make it too often, but everyone loves it when I do. I use Large Shells instead of Manicotti tubes. They are easier to fill.
Manicotti
14+ shells
15 oz ricotta
2 C mozzarella (shredded)
¼ C grated parmesan
2 Tbsp chopped fresh parsley
½ tsp salt
¼ tsp pepper
3 C spaghetti sauce
Cook the shells according to the packet directions, strain and let them cool. Mix cheeses, parsley, salt and pepper, fill shells. Pour a little sauce in bottom of pan, put shells on top, pour rest of sauce on. Cook 20-40 min at 350. It’s simply to warm it completely. I just watch the sauce, and when it starts to bubble it’s done.
I double the filling, but only use one box of Jumbo Shells! If you try it let me know. If you have a different favorite recipe send it to me so I can try it out!
















































I actually think it looks good. It’s time for lunch and I’m starving. I do the same thing with the shells. So much easier!!

Right? Shells are the only way to go for Manicotti! I’m still working on taking nice looking food photo’s!
