I hope you all had a happy Halloween! I know we did! Since we did our trick or treating on Saturday tonight was just for fun! We FINALLY got around to carving our pumpkins! We had a great time. Since our “front” door faces the back yard we’re the only ones who can enjoy them. Also since George would eat anything we put out, veggie wise, we are keeping them inside on our window sill.

The kids loved doing it, of course I ended up doing all the gross parts. UGH! But it’s worth it for the kids enjoyement. Anyway when we finished it was time for dinner. We decided to go with breakfast for dinner, one of our favorites. Last night? Pumpkin Pancakes! Seem’s appropriate, huh?

Pumpkin Pancakes
5 C Flour
1/2 C sugar
1 1/2 Tbsp baking powder
2 tsp cinnamon
2 tsp allspice
1 1/2 tsp salt
whisk together
3 1/2 C milk
1 1/2 C pumpkin
8 Tbsp butter, melted
4 eggs
whisk together
Pour the wet over the dry, mix just until combined, should be lumpy. Add any extras ex. chocolate chips, etc… Cook over med- med/high heat until there are multiple bubbles, then flip and cook for a few more minutes. Makes about 40 pancakes, depending on your size.
I cooked a few rounds plain, then added mini chocolate chips to the rest of the batter. We enjoyed filling up on Pumpkin pancakes with homemade maple syrup. Then for dessert? Chocolate chip pumpkin pancakes with Whipped cream on top! Delish! They were a hit with everybody! Definitely one we’ll be making again!

I was surprised at just how good they turned out. Definitely pumpkin, but not TOO pumpkiny! And today they made terrific afterschool snacks!
